Penne Pasta Parmesan - With Garden Delights!

It's been several months since I have posted an original recipe, but, finally, here goes another one. It tastes great, and, it is healthy, especially if you use whole wheat pasta!

This takes about 1/2 hours to prepare, and you can do many things simultaneously. All quantities will be to taste.

Ingredients:

  • Penne Pasta (preferably whole wheat).
  • 1 - 2 Tablespoons Olive Oil (depends upon the amount of pasta)
  • Parmesan cheese - grated
  • Garlic (or Garlic Powder)
  • Pepper
  • Oregano
  • Dried Basil
  • Chopped Fresh Garden Vegetables - the ones used in this recipe:
  • Tomatoes - both red and yellow
  • Banana Peppers both hot and mild
  • Red and green onions

Instructions:

Cook pasta according to directions. Drain.

While pasta is cooking, slice vegetables.

In a frying pan, or wok, heat olive oil on medium heat, be careful not to burn. Add pasta. Stir fry pasta, preferably with a slotted wooden spatula. Add parmesan cheese, garlic, pepper, oregano and dried basil. Continue stir frying. When pasta just starts to change color and firm up, add the chopped vegetables. Stir fry for just a minute or so.

Remove from burner and serve immediately. Sprinkle a bit of grated parmesan over the dish. Garnish with parsley or basil.
